Abstract

Bananas are the largest horticultural commodity in Bandar Lampung City, based on data from the Department of Agriculture of Bandar Lampung City in 2022. Bananas are the most abundant horticultural crop in Bandar Lampung City, with a total of 8,272.39 tons.The Central Chip Industry Area of Bandar Lampung City, established in May 2008 and located on Pagar Alam Street, also known as Gang PU, serves as a hub for home industry banana chip production. Initially, the goal was to promote Gang PU as a banana chip center andas a hub for other banana-based products, including Frozen Banana Fritters (Pisang Goreng Beku Shamiya). Shamiya produces frozen banana fritters using raw materials of Pisang Kepok bananas, producing approximately 1 ton per day. Frozen banana products have a longer shelf life for inter-province transportation. The bananas are friedwith cooking oil until partially cooked, followed by packaging before being placed in a cooler. This process requires a significant amount of cooking oil and results inthe generation of two different types of waste: banana peel waste and used cooking oil waste. These wastes can be processed into valuable materials by implementing a zero-waste industry approach. They can be used as raw materials for producingsouvenir handwashing soap.
