Abstract

Banana leaves are one of the banana plant wastes which can be used as raw material for making liquid smoke, because they are abundant and contain 10.85% cellulose, 19.95% hemicellulose and 18.21% lignin. Liquid smoke has many benefits, including antimicrobial and food preservative. The aim of this research was to identify the chemical content of redistilled liquid smoke from dried banana leaves. The process of making liquid smoke includes pyrolysis, precipitation, distillation and adsorption with active zeolite. The liquid smoke produced was then analyzed for its chemical compound content using GC-MS and analyzed descriptively. The results showed that liquid smoke from dried banana leaves as a result of redistillation had a characteristic chemical composition consisting of 85.48% phenolic area, 13.09% area acid, and 1.42% area carbonyl and no PAH compounds..
