Abstract

Addition of S. cerevisiae to tempeh was considered as innovative functional probiotic food to enhance host health benefits. This study aims to evaluate the survivability of S. cerevisiae and E. coli in the intestine and to monitor the blood serum and lipid profile of the mice fed tempeh added with S. cerevisiae (SMT). The study was arranged in a completely randomized design with a single factor (feeding type) and five replications. The mice were grouped into three and fed standard feed; standard feed + SMT flour; standard feed +commercial tempeh flour for group 1, 2, 3, respectively for 10 days. The data were analyzed statistically by ANOVA, if the treatments were significantly different then the LSD test (5%) was performed. The feeding type significantly affected the survivability of S. cerevisiae and E. coli in the intestines, the level of WBC and hemoglobin of the blood serum, but it did not affect RBC. The SMT possessed the highest survivability of S. cerevisiae (6.12±0.051 CFU/ mL) and the lowest survivability of E. coli (5.87± 0,05 CFU/mL). Furthermore, lipid profile included cholesterol, triglycerides, cholesterol HDL, and cholesterol-LDL were 102.67, 304.67, 25.00, and 47.00 mg/dL, respectively. Tempeh contained S. cerevisiae was potential as functional probiotic tempeh.
