Abstract

Jelly candy is a candy with a soft texture made from fruit juice and with the addition of hydrocolloid components to produce a jelly candy texture that is sturdy and chewy so it is easy to eat, it can be made from temu mangga and mango arumanis juice.The purpose of the study was to obtain a formulation of temu mangga extract and mango juice arumanis that can produce jelly candy with the best physical and sensory properties according to SNI 3547-2-2008. The method used by The Complete Randomized Group Design (RAKL) with 4 repeats using a single factor consisting of 6 levels of the formulation of temu mangga extract and mango juice arumanis. The data obtained was analyzed statistically using the Bartlett and Tukey tests followed by the ANOVA test and the BNT test at the 5% level. The results showed that the formulation of temu mangga extract and mango juice was best at the T5 (60:40)% treatment that produced aroma with a score of 3.94 (likes), a color score of 4.30 (very like), a taste score of 3.87 (likes), a texture score (suplanousness) of 3.82 (likes) and an overall acceptance score of 4.50 (very like). Temu mangga extract jelly and mango juice treatment T5 (60% mango common extract: 40% mango juice) can survive for 7 days in room temperature storage with a moisture content of 11.07%, ash content of 2.28%, sugar reduction of 7.20%, antioxidant activity of 57.78%, total microbes of 2.74x104 colonies/g and total kapang 6x10 colony/g.
