Abstract

The distinctive taste of coffee and odor is influenced by coffee processing. The distinctive taste and odor of coffee is an important parameter used to classify and differentiate various coffees' types and quality. The development of increasingly sophisticated technology is characterized by technology that resembles the human nose's work, namely the Electronic nose (E-nose). Enose is integrated with a microcontroller to facilitate data acquisition of each sensor voltage. Chamber type and E-nose sensor placement determine the level of stability of the coffee aroma measurement. In order to obtain a stable sensor voltage response pattern, it is necessary to modify the Chamber. Modifications are also applied at the position of the sensor so that the output voltage becomes more stable. Inner Chamber (Chamber A) with the sensor room's location and the sample space that is one. Outer Chamber (Chamber B) with a separate sensor Chamber and sample Chamber. The positioning of the sensor at the top, side, and bottom will determine the stable position. The addition of a mini diaphragm pump can produce a stable voltage pattern output. This study's results indicate that the use of E-nose on samples of Natural Robusta Coffee Beans is more stable using Chamber A. The best position for the sensors in this sample is the side placement. The stable condition of Chamber A, which is characterized by a graphical pattern generated horizontally, will be stable in the 5 th minute. The stable condition on the side placement is indicated by the x coefficient in the mathematical model equation, which is closest to 0. Keywords: chamber; e-nose; microcontroller; natural robusta
